Set Message Encoding and Character Set Usage

1. Click Start, point to Programs, point to Microsoft Exchange, and then click System Manager.
2. Double-click Global Settings.
3. Double-click Internet Message Formats. The right pane displays a list of the Simple Mail Transport Protocol (SMTP) policies that are currently defined. The domain column specifies the domains to which the policies apply.
4. Right-click the policy that you want to edit, click Properties, and then click the Message Format tab.
5. Exchange Server can format messages by using either UUEncode or Multipurpose Internet Mail Extension (MIME). Use one of the following procedures:
   • To use UUEncode:
     1. Click UUEncode.
     2. For Macintosh clients that are using the native binary encoding format, click Use BinHex.
   • To use MIME:
     1. Click MIME
     2. Click Provide Message Body as Plain Text, Provide Message Body as HTML, or both.
   Exchange Server also supports Exchange Rich Text Format (RTF). RTF settings are on the Advanced tab.
   
   
6. Select the character sets to use for MIME and non-MIME messages. The default character set is Western European (ISO-8859-1). All text in the affected outbound messages will use the character set that you specify.
   
   Note that by default, only MAPI clients, such as Outlook 2000, use the encoding and character sets that you specify. If you also want non-MAPI clients to use these settings, click Apply Content Settings to non-MAPI clients.
7. Click OK to apply the changes.
