text in headers, footers, notes, and Notebook subjects.

This behavior is by design.
MORE INFORMATION
This information applies to printing or previewing using non-color
printers. All non-white text is printed as black. White formatted text in
headers, footers, notes, and Notebook subjects will not be printed. All
other white formatted text, such as column headings, graph bar text, and
task sheet data, is printed in black.
